Which Rust servers are best for someone who has just started?

Look for a server with players on it, a wipe every week or two so the map resets often enough to keep things fair, and a group cap that stops large clans. The server's own rules page tells you whether it enforces those things. Names in this list say the owner intends the server for new players, but the rules are what you should actually read.

Is it better to start on a solo server or a group server?

Solo and duo limits are the simplest place to learn, because you are not competing with clans of eight. A trio or quad cap gives you teammates to share the work without the map being dominated by one big group. Check the Group column and start with the lowest limit you are comfortable with.

What gather rate should a new player pick in Rust?

If the server name does not state a rate, it is usually vanilla. A 2x server is a common compromise: less time spent hitting nodes, but loot and progression stay close to the standard game. Higher multipliers such as 5x and 10x speed everything up and tend to attract a more experienced, more aggressive crowd.

Do servers marked for beginners really go easier on new players?

Some of them do, through rules against spawn killing or by lowering upkeep, and some carry the label with no rules behind it. This list is assembled from names only, so nothing here has been checked for how friendly it is in practice. Open the server's own page and read its rules before you rely on them.
